Lo Zucco Amoglio  (Dressing)

  • 1 lemon
  • 6 tablespoons of olive oil
  • 1 clove garlic
  • 1/2 teaspoon sea salt
  • pepper

Squeeze 1 lemon into a small bowl add twice as much olive oil.Add sea salt and fresh ground pepper to taste and 1 clove of freshly chopped garlic. Laddle over meats and seafood.Add parsley or oregano as a variation

Addina Muddicata  Arustuta          (Barbecued Breaded Chicken Breast)

I reccommend to  always use a real charcoal barbeque. Preferably a kettle type.

Prepare the breading by using 3/4 cup bread crumbs 1 tablespoon finely chopped parsley 1/2 teaspoon of Montreal Steak Spice 1/2 teaspoon sea salt and ground pepper to taste. Mix these well. In a small bowl drizzle   olive oil over 4 chicken breast halves ensuring they are completely coated. Then coat each with the breading and set aside. Roast as desired on the barbeque.

Fettina

  • 3/4 cups bread crumbs
  • olive oil
  • 1 tablespoon finely chopped parsley
  • 1/2 teaspoon sea salt
  • pepper to taste
  • 4 slices of thin sliced (Fast fry) sirloin tip steak

Coat the sirloin tip steak with olive oil and set aside. Combine the bread crumbs salt pepper and parsley together. Coat the steaks with the breading. Fast fry in olive oil or roast on the barbeque.
